Caramelly Delighted...

In case you didn't know, it's officially Girl Scout Cookie Season!
These bad boys look like your standard "Samoa"
 (When I was in troop 428 we called them Caramel Delights...)
but taste a heck of a lot better.

Let's get right to business!



For the cookies:

1 cup butter, softened
1/2 cup sugar
2 cups all purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
up to 2 tablespoons milk

For the topping:

3 cups shredded coconut
12-ounces good-quality chewy caramels
1/4 teaspoon salt
3 tablespoons milk
8 ounces dark chocolate 


Preheat your oven to 350!

Cream together your butter and sugar



mix in flour, baking powder and salt on low speed


then the vanilla and milk (add the milk only as needed to make the dough come together)



roll out your dough between two pieces of parchment paper to about 1/4 inch thickness


then cut out circles using a biscuit cutter




and cut out holes in the middle of those guys using a large piping tip


Place on a prepared baking sheet





and bake 10 - 12 minutes or until the bottoms are just barely golden brown.
Transfer to a wire cooling rack.


Now, for the topping.

Set your oven for 300
and place your coconut on a large baking sheet.
Bake for 20 minutes, stirring every 5.
(be sure to watch it towards the end...)


When your coconut is nice and golden brown,
 set it aside to cool and begin melting your carmel


don't these guys look like they would be hard like a macademia?


They're not. Super squishy.
Anyway, melt your caramel


and stir in your coconut


Now to put it on the cookie...


the cookies are very fragile, so I found leaving them flat on the 
counter or cookie sheet while you spread works best.


give each one a good dollop.

Then you want to melt your chocolate...


and take the plunge.


I used a fork to help me..


place your cookies on a piece of parchment to let the chocolate set up


should look something like this


once you have dunked them all, take your left over chocolate and place it in a bag to pipe


Let that set up and you're good to go!

In the toppings part you put milk and salt... For what? In the recipe for the toppings they were not specified where to use them.
