Kim & Kyle!

Kim & Kyle were married on a fabulous Saturday afternoon surrounded by their 
friends and family...
and some MEGMAC paperwork!
Kim and I started working on her vision for her invitations, 
programs, escort cards, table numbers, and a few other details in the summer
and her ideas all came together perfectly on the big day.

I thought it only fitting to share with all of you.


First we started with her invitation:






printed on pearlescent silver paper and mounted on an eggplant purple card stock.


After the invites were all sent out we worked on her Escort Cards:

I had so much fun creating the pieces & of course participating in the event!
Kim looked amazing and all her hard work really paid off.

Tasty Tuesdays!

Caramelized Onion Tart!


So every week my buddies and I have what we call "UNO night"
(it's funny because we don't even play UNO anymore.)
  We do however eat. 
One night it was my turn for dinner and instead of prepping a full meal,
 I whipped up a bunch of little bites, tapas style.
This was a definite crowd pleaser.
Quick, Painless, Delicious.


Let's get started.



Ingredients:
2 tbsp. butter

1 medium-large yellow onion, thinly sliced

1 tsp. fresh thyme leaves
1 tsp. sugar
¼ tsp. salt
Black pepper
2 tbsp. white wine (optional)
½ cup ricotta cheese
1 egg yolk
1 sheet frozen puff pastry, thawed 
¼ cup shredded Parmesan cheese



Directions:


Preheat the oven to 350° F. 

 In a medium saucepan set over medium heat, melt the butter.  

Add the sliced onion, thyme, sugar, salt, pepper and white wine to the pan.  

Cook, stirring occasionally, until the onions have fully caramelized and are golden brown in color, about 20-25 minutes.  
Remove from the heat and set aside.  
In a small bowl whisk together the ricotta and egg yolk until smooth.
To assemble the tart, lay the puff pastry sheet on a baking sheet and fold in each edge about 1 inch.  Spread the ricotta mixture over the puff pastry.  Sprinkle about half of the Parmesan cheese over the ricotta mixture.  

Layer the caramelized onions evenly over the ricotta mixture.  Top with the remaining Parmesan.  


Bake 25-30 minutes, until the puff pastry is golden and baked through.
 Slice into squares and serve warm.

Friday Faves!

Happy Birthday...

TO ME!

Yep, It's my birthday, I'm officially an old lady.
But I have a fun filled weekend ahead of me.
Dinner tonight with my favorites, and the BLACKOUT PARTY 
tomorrow night, which is going to be bittersweet but a great time!
