Crabby Blogger

2 days of torrential downpour will do that to you.
Although I try my hardest to not be a grump,
these cold rainy indoor days immediately following a beautiful few days 
makes it nearly impossible.

Vicarious Living

Well, this is pretty much what I'm dealing with today:
Yes, it is the final days before Memorial Day, the supposed start of summer,
and I am stuck inside seeking shelter from the cold, wind and scary death clouds hanging over me.

In a desperate attempt to not lose complete faith in this glorious gloomy city of mine,
I have put together a little dream cocktail party with the help of some gorgeous images
found on some of my favorite blogs.

I'm almost scared to think about how negative my mood would be if it weren't for the inspiration that can be found on the ol' interweb.

So, ladies, shall we have a cocktail?




Stay dry, Chicagoans.

Chocolate-dipped Pretzel Cookies

If you like a sweet & salty combo,
today's treat is RIGHT up your alley.


These crispy little cookies have a sweet batter 
infused with pretzel bits, dipped in velvety chocolate and sprinkled with Kosher salt.
Hello!?
What more could you need?

How about a little how-to:


Ingredients:
1 Cup (2 sticks) room temperature butter
3 Cups chopped pretzels (I used the thin sticks but any will do)
1 1/2 Cups Powdered Sugar
1 Cup Flour
2 Eggs

Chocolate for melting
Kosher (or other large flake) salt

Easy enough, right?

So let's get to this:

Preheat your oven to 350

First you want to beat your butter until it's light and fluffy


Add in half of your chopped pretzels 



and your powdered sugar


Until it's well combined.

Slowly add in the flour and eggs until everything is mixed together
adding the last portion of pretzels until just combined.


By rounded spoonful (or cookie scoop) drop your dough onto a prepared cookie pan


(The dough will not spread out much - so if you want a flat cookie,
 you'll have to press the dough down with the palm of your hand)

Put those suckers in your preheated oven for about 9 minutes
and then take them out to cool completely on a wire cooling rack.


Once they have cooled you can melt your chocolate


Then dip in half your cookie


and sprinkle with salt while the chocolate is still wet.


Once the chocolate has hardened, they're all yours!

Sunshine!

The weekend consisted of much less than originally planned, 
so I only have a few snaps of Grady at swim class:



He was (by far) the best swimmer in class
and looked handsome as ever in his little trunks.

Now, back to the sunshine!
This weekend (with the exception of a storm late last night) was spectacular.
Full of sunshine, warmth, and a true essence of spring!

It's Friday,
&
BLOGGER IS WORKING!!
In case you missed it, we didn't have a Friday Faves last week because 
Blogger someone was feeling under the weather...
...this does not however explain the lack of Monday's Inspiration post. I'll take full credit on that one.


Anyway, folks, the task at hand, 
FRIDAY!!!!

My weekend involves:
*Baking
*Squeezing my sweets
*Snapping pictures at Plop's SWIM CLASS! 
(dying to see that baby in some trunks.)
*Margarita's
and...hopefully 
*Snagging a screaming deal on some dining chairs with upholstered seats.
(Anyone have any they're trying to get rid of? Anyone? Bueller?)
